CARAMELIZED ONION CROSTINI
PREP TIME: 1 hour 30 minutes
SERVINGS: 20 pieces
Sweet caramelized onions pair perfectly with tangy goat cheese on a warm crostini.
4 medium-large yellow onions, peeled, halved and thinly sliced (approx. 2 ½ pounds)
4 cloves garlic, minced
2 tbl olive oil
1½ tsp salt
1 cup Jam Jar Sweet White, more as needed
½ tsp minced thyme
¼ cup goat cheese
1 tsp honey
Heat oil in pan over medium heat. Saute the onions, garlic and salt for about 20 minutes, until onions start to turn translucent. Add the wine and thyme, and gently simmer uncovered until liquid has evaporated (about 1 hour).
Toast baguette slices under the broiler until slightly golden. Let cool.
Mix the goat cheese and honey together and spread onto baguette slices. Top with caramelized onions and a few extra thyme leaves.
