RASPBERRY JAM JAR VINAIGRETTE
PREP TIME: 15 minutes
SERVINGS: ½ cup
This sweet and tangy vinaigrette is the perfect dressing to brighten up a light summer salad.
1 cup Jam Jar Sweet Shiraz
1/3 cup packed thinly sliced shallots
1 cup (4 oz) fresh raspberries
1/3 cup safflower oil
¼ cup raspberry vinegar or red wine vinegar
8 cups mixed salad greens
1 cup sliced strawberries
¼ cup toasted pine nuts
¼ cup goat cheese
Combine Jam Jar Sweet Shiraz and shallots in heavy small saucepan. Boil until liquid is reduced to 2 tablespoons, about 10 minutes. Add raspberries, oil and vinegar. Boil 3 minutes. Season vinaigrette with salt and pepper. Let cool slightly, then blend with a hand processor until smooth.
Combine greens in large bowl. Pour vinaigrette over greens and toss. Sprinkle with strawberries, nuts and cheese.
