Garlic Butter Shrimp Scampi
Recipe by Kasim Hardaway
PREP TIME: 15 minutes
SERVINGS: 4
INGREDIENTS:
1/2 cup Jam Jar Sweet White
2 tbsp olive oil
4 tbsp unsalted butter, divided
2-3 garlic cloves, smashed
1 tbsp minced garlic
1 ½ lbs shrimp, peeled
2 tbsp fresh lemon juice
salt & pepper
Garnish with chopped parsley and lemon
Additional garlic for garlic lovers :)
DIRECTIONS:
Pat dry shrimp and season with salt and pepper. Set aside.
In a large pan, heat olive oil and 2 tbsp butter over medium-high heat. Once butter melts, add in garlic and saute for 1-2 minutes. If garlic begins to brown, lower heat.
Add shrimp and saute for ~2 minutes per side. Flip shrimp once they begin to transition from translucent to pink in color. Pour in Jam Jar Sweet White and simmer for an additional 1-2 minutes. Keep an eye on your shrimp—you don’t want to overcook them.
Add in 2 tbsp butter, lemon juice and parsley. Stir and remove pan from heat.
Toss shrimp and sauce in linguine for a classic shrimp scampi or serve over rice with a tall glass of Jam Jar Sweet Shiraz.
